This one is simple and pretty tastey!
Salmon Fried Rice
3 T olive oil
2-3 C cooked rice
1 small can or pouch pink salmon
2 C frozen stir fry vegetables
2 eggs, beaten
2 T soy sauce
In Dutch Oven, over medium high heat, heat olive oil. Carefully add the cooked rice and stir fry for a few minutes to heat. Add salmon and frozen vegetable; stir fry for 3-5 minutes until peas are hot. Push mixture to the sides of skillet or wok and add beaten eggs. Scramble eggs until just set, then stir eggs into rice mixture. Sprinkle with soy sauce and stir fry for another minute or two, then serve. Can also use other meats instead of salmon. Serves 4
