Grandma's Best Pancakes *Coleen Allen 2 Cups Flour 1 Tbsp Baking Powder 1 tsp Salt 1/4 Cup Sugar 2 Eggs 1/4 Cup Oil 2 Cups Milk 1 tsp Vanilla Mix all ingredients together. Flip Dutch Oven lid upside down on Trivet, place 12-15 coals underneath. Lightly oil the lid then pour by 1/4 cup full on lid and cook until bubbly then flip over and cook other side until browned. Mtn Man Breakfast * Matthew 2nd Quarter Recipe Contest Winner 1/2 lb Mild Sausage 1/4 lb Ground Chuck (I prefer 90/10) Slice of Ham Steak - Chopped 1 Bag of Croutons any variety 6-12 eggs (2 per person) 1 Med onion - Chopped 1 Med. Bell Pepper - Chopped Half to whole bag of Sharp cheddar Cheese Shredded 1/2 cup milk or Cream ** Salt & Pepper to taste Cook Sausage, Chuck and Ham Steak until half cooked. Drain and set aside. Cook Onions and bell pepper until half cooked. Mix meat and onion mixture together then pour on crouton and pour eggs and cheese salt and pepper to taste. Add milk or cream and cook until cheese is melted and meat has finished cooking. ** Milk or cream amount can be changed according to your preference, this is just for moisture and consistency. Pancakes *Colene Allen 2 Cups Flour 1/4 Cup Sugar 1 Tbsp Baking Powder 1 Tsp Salt 1/4 Cup Oil 2 Cups Milk Mix all dry ingredients together. Add oil and eggs and add milk gradually. Stop milk when you get the consistency you want. Place 10 coals on ground and place lid holder over them. If you don't have a lid holder you can use 3 even size rocks. Place Dutch Oven lid upside down on lid holder. Oil lid then once hot pour pancake batter on cook until bubbles stop forming and flip over and cook until browned. (browned on both sides). If it is burning remove some of the coals. Whole Wheat Pancakes *Amber Allen 1 Cup Whole wheat flour 1 Tbsp Brown Sugar 2 tsp Baking Powder 1/4 tsp Salt 1 Cup Milk 2 Tbsp Applesauce Mix all dry ingredients together then pour in liquid ingredients. Mix until moist but not smooth, there will be lumps. Pour into 4in circles in a greased Dutch Oven, or flip Dutch Oven lid upside down over coals and cook over heat. When it stops bubbling flip pancake over. Cook until browned on both sides.
